Healthy pumpkin cacao cakes for your little one
We have a delicious recipe for you that is very popular with kids. These cakes are sugar, lactose and gluten free and they are very tasty! It’s also fun to make these cakes together with your little one as an activity and enjoy them together after. Are you going to make them?
What do you need for the cakes:
300 g pumpkin (cubes)
100 g almond flour
100 g oat flour
150 g dates
2 eggs
50 ml melted coconut oil
3 tbsp cocoa
1 tsp baking powder
1 tsp baking soda + dash of lemon juice
Muffin molds or other (silicone) baking tins
Food processor (or hand blender)
How to make the pumpkin cakes:
- Boil or steam the pumpkin
- Puree the pumpkin until smooth
- Pit the dates and grind them into a paste
- Put the pumpkin, eggs and melted coconut oil in a bowl and mix
- Then add the date paste, flour and cocoa powder and mix again
- Mix the baking powder with baking soda and lemon juice and add this as well
- Scoop the batter into the molds with an ice cream scoop or spoon and bake at 170 °C (338 °F) for about 35 minutes
